Aqua Expeditions’ Chefs ROCK!

Aqua Expeditions holds great pride in its staff’s achievements and is proud to share news of its two chefs’ recent accolades.

image001Pedro Miguel Schiaffino, Executive Chef of Aqua Expedition’s Amazon cruises, Peruvian celebrity chef and owner of two acclaimed restaurants in Lima—Malabar and AmaZ, treats our guests to creatively produced, unique Amazonian dishes using innovative blends of locally sourced produce, fish and meats.

Schiaffino’s restaurant AmaZ (Lima, Peru) was recently honored with a San Pellegrino Award and Maria Jose Jordan, AmaZ’s chef who trained under Schiaffino, recently won the Latin America and Caribbean region semi-final of the San Pellegrino Young Chef 2015 competition – the inaugural global talent competition to find the world’s best young chefs.

image002She is the first, and only, female chef chosen to travel to the grand finale in Milan this coming June. There she will compete with 19 other young chefs for the title of “World’s Best Young Chef”.

On the other side of the world, Aqua Expeditions’ Consulting Chef of the Aqua Mekong , David Thompson, has recently been awarded the No. 7 spot in the San Pellegrino’s Asia’s 50 Best Restaurants 2015 and was 13th in the World’s 50 Best Restaurants 2014 for his restaurant, Nahm, in Bangkok.

Thompson is an internationally acclaimed chef, restaurateur, and cookbook author with a talent for crafting innovative asian-inspired dishes. His newest venture, Long Chim—a casual Thai dining spot in Singapore, has recently opened with great fanfare. Kudos to our masterful Chefs on the Mekong and the Amazon!
