We are thrilled to announce that Malabar and ámaZ – our very own Executive Chef, Pedro Miguel Schiaffino’s restaurants in Lima – were chosen among Latin America’s 50 Best Restaurants 2017.
This highly-regarded list is a snapshot of the opinions and experiences of over 250 Latin American restaurant industry experts and champions the significant development and growth of the gastronomic industry across Latin America – something that Aqua Expeditions has long held at the heart of its Amazon experience. Pedro-Miguel is internationally renowned for his innovative Amazonia inspired cuisine, which you can sample on board the Aria Amazon.
By his own admission, the cooking at Malabar is not high-tech or showy. A four-year stint in Italy working under some of the country’s greatest chefs – including Nadia Santini of Dal Pescatore in Mantova – has instilled a light touch and a fondness for Mediterranean ingredients, alongside his celebrated use of ingredients sourced from our back garden, the Peruvian Amazon. Pedro works with the many new farming cooperatives springing up on the banks of this mighty river to ensure a steady supply of high quality, hard-to-find ingredients harvested in a non-intensive manner.
